This jar has been sitting on my counter every single day for months now. It’s clabbered milk. Warm milk, a spoonful of sour cream or yogurt as a starter, left somewhere warm for a few hours. That’s genuinely the whole process. It thickens, turns tangy, and becomes something your gut is incredibly happy about. I got into this because I felt off for a long time. Not sick, just never quite right. Bloated, tired, getting every cold. Turns out a huge part of how you feel day to day, your immunity, your mood, even your sleep, is connected to what’s living in your gut. And most of us have spent years wrecking that without realizing. Antibiotics, stress, processed food, it all takes a toll on your microbiome and it doesn’t just bounce back on its own. Fermented foods are one of the most direct ways to actually restore it. And clabbered milk is about as simple and accessible as it gets. No equipment, no complicated steps, ingredients you already have. I drink a small glass every morning. My digestion calmed down, I stopped waking up in the middle of the night, and my skin got noticeably better. Could be coincidence but I’ve stopped making it a few times and noticed the difference pretty quickly. Warm milk + a spoonful of starter + a few hours of patience. That’s it.
