Jasper EpsomComment “Kimchi” for the full recipe.
If you care about gut health, you should probably be eating fermented foods.
Why?
Because fermentation introduces beneficial microbes that support digestion and help your body absorb nutrients more effectively.
You’re not just preserving food. You’re transforming it.
As vegetables ferment, microbes begin breaking them down and increasing the bioavailability of certain nutrients — meaning your body can actually use more of what you’re eating.
Kimchi is one of the easiest ways to start.
And the good news is you don’t need anything fancy.
Just:
Cabbage
Salt
Garlic
Ginger
Chilli
Time
About 20 minutes of preparation, and then the microbes do the rest.
What I like most about making my own isn’t just the health benefits though.
It’s the process.
Walking into the garden, harvesting the cabbage, and turning a few simple ingredients into something that will feed you for weeks.
Simple food.
Living microbes.
Better digestion.
